Tis the Season


I’ve heard that the Christmas season is upon us, but with the unseasonably warm weather, I’m having trouble getting in the spirit.

Despite having decorated the apartment, donned reindeer antlers, played countless Christmas songs on Spotify, and sported red and green attire… I’m still not feeling it.

What to do?


Although I have always been someone who prefers cooking, baking cookies and candies and cakes and everything else that is sugary, sweet and delicious always gets me in the spirit of the season.

Fudge-Filled Cookies

1 1/2C semisweet chocolate chips
1/2can (7oz) sweetened condensed milk
4C AP flour
1tsp baking powder
1/2tsp baking soda
1/2tsp salt
1C (2 sticks) unsalted butter, room temp
4oz cream cheese, softened
2C packed light brown sugar
2 eggs
2tsp vanilla

For the fudge:
Place small pan over low heat. Add sweetened condensed milk and chocolate chips. Stirring frequently, heat until melted combined. Remove from heat and set aside. Allow mixture to cool.

For the cookies:
Preheat oven to 350. Line baking sheet with parchment paper.
Combine flour, baking powder, baking soda, and salt.
Beat butter, cream cheese and sugar. Add eggs and vanilla.
Slowly add the flour mixture to the wet ingredients until combined.
Flatten 1T of dough into a disk. Place 1/2tsp of the cooled fudge in the center and place an additional 1T disk of dough on top. Press the edges together to seal and place on cookie sheet.
Bake at 350 for 11-12 minutes, until edges are lightly browned.
