If I Knew You Were Coming I’d Have Baked a…

I’m celebrating.

Because I said so.

You might be thinking to yourself, ‘I wonder why she isn’t blogging about Valentine’s Day?’ Everyone else seems to be blogging about it, so I figured I would give you a Valentine’s Day break. This post isn’t pink, heart-filled, or lovey-dovey.

I made this cake last Sunday at 9am for absolutely no good reason. This cake was not baked to celebrate someone’s birthday or anniversary or wedding or a big dinner or even because someone was coming over to my place. This cake was made for no good reason. It’s a no-good-reason cake.


And when I was finished (at 10am on a Sunday), I started to think of my reasoning for having made this cake (and also a reason for having eaten a rather large piece before lunchtime on a Sunday morning), but in truth you don’t always need a reason to celebrate. Sometimes, life itself is just worth celebrating.

Here is to Sunday morning cake makers… and delicious chocolate cake.

Chocolate Oatmeal Cake

1C brown sugar
1C white sugar
1/2C butter, melted
2 eggs
1 3/4C flour
1tsp baking soda
1/2tsp salt
1 1/2T unsweetened cocoa powder
1C quick cooking oats
1 3/4C warm water
1 (12oz) bag chocolate chips

For the frosting:
6T butter
6T milk
1 1/2C sugar
3/4C marshmallows
3/4C chocolate chips

Spray a 9×13 pan with no-stick spray and set aside. Preheat oven to 350.
In a bowl, mix butter and sugars. Add eggs.
In a separate bowl, combine flour, baking soda, salt, and cocoa.
In another bowl (sorry!), combine hot water and oats. Set aside for a few minutes, allowing it to cool slightly and oatmeal to absorb the water.
Combine wet and dry ingredients, stirring until barely combined. Do not over stir. Stir in the oat mixture and half of the chocolate chips (6oz).
Pour batter into prepared pan. Top with remaining 6oz of chocolate chips.
Bake at 350 for 30-35 minutes, until done. Remove from oven and allow to cool.

For the frosting:
Melt butter, milk, and sugar in a pan over medium heat. Bring to a boil for 30 seconds. Reduce heat. Add chocolate chips and marshmallows. Stir until smooth. Immediately pour over cake. It hardens almost immediately so it’s important that you work quickly!
