Last week I ventured into the wonderful world of trampoline
Yes, you read that right.
I jumped on a trampoline … like a kid… for an hour… and it qualified as a workout.
Yeah! Major fun!
Do you know what else is fun?
Eating cookies. But after an hour of jumping, I didn’t want to eat cookies that were 100% completely totally entirely unhealthy.
How about cookies without eggs… without butter… and with a little whole wheat flour mixed in for good measure?
Yeah, that sounds like it’s not a totally bad idea.
These aren’t health cookies. These are healthier-ish cookies.
And yes, jumping on a trampoline can be a workout.
1/2C coconut oil
1/2C brown sugar, packed tight
1 flax egg (1T ground flaxseed + 3T warm water)*
3T nondairy milk (rec: soy or coconut)
1C whole wheat flour
1/2C AP flour
3/4tsp baking powder
1/2tsp baking soda
3/4C chocolate chips
1/2C unsweetened coconut flakes
Preheat oven to 350.
Combine coconut oil and sugar. Beat until incorporated. Add flax egg and vanilla. Set mixture aside.
In a separate bowl combine flours, baking powder, baking soda and salt.
Combine wet and dry ingredients. Add in milk if mixture is too dry. (You may not need it all)
Add in chocolate chips and coconut flakes. Stir to combine.
Drop by rounded tablespoon onto baking sheet lined with parchment paper.
Bake for 10-12 minutes, until edges are light brown.
Let cool on sheet for 5 minutes, before transferring to a wire rack to cool completely.
