I get it. Muffins are cake for breakfast. I’m not even going to argue with you on this.
Muffins. Cake. Breakfast.
1 stick unsalted butter, room temperature
3 very ripe bananas, mashed
1C all-purpose flour
1C whole wheat flour
1tsp baking powder
1tsp baking soda
3/4C dark chocolate chips (optional)
Preheat oven to 325. Line muffin tin with paper liners.
In a bowl, cream sugar and butter. Add eggs in and beat. Add in mashed bananas, milk, and cinnamon.
In a different bowl, combine flour, baking powder, baking soda, and salt. Stir to combine.
Combine the wet ingredients with the dry ingredients. Stir until just barely combined — it’s even okay if there are still a few flour streaks left. Add in chocolate chips. Fold a few times to combine.
Fill muffin tin (each 2/3 full). Bake at 325 for 18-22 minutes, until full cooked.
Remove from tins. Allow to cool. Enjoy.
Store leftovers in an airtight container.
