365 days ago I had all the ingredients to make this very recipe. My mom had raved about these ‘way-too-easy treats’ and I myself was set to make them.
But then something very, very unfortunate happened.
I ate the ingredients… separately…. entirely… wholly… without ever making the actual recipe.
Christmas came and went. Not one Ritz-bitz-mint-cookie-creation was made. So sad. Too bad.
But alas, the season of Christmas cookie mania is upon us again.
This year I bought the ingredients….
and made the recipe!
Success. Deliciously, sweet, mint success.
This recipe sounds a little odd, but it is simply wonderful.

Chocolate Mint Sandwich Cookies

Ritz Crackers (~1 large box)
Pearson’s Peppermint Patties, unwrapped (~1 bag)
Chocolate bark (recommend: dark)
Melt chocolate over double boiler or in the microwave.
Place peppermint patties between two Ritz crackers. Microwave for a few seconds (like 4-6seconds). Press down slightly to sandwich the patty between the two Ritz crackers.
Allow to cool for several minutes. To expedite this process, you could place Ritz sandwiches in the fridge or freezer for a few minutes.
Once cooled, dip each sandwich in melted chocolate. Place on wax-paper lined baking sheet. Allow chocolate to set completely.
Store in a cool place (or the fridge!)
