Look, Mom! There is Cauliflower in my Pizza Crust!

I saw this recipe and I fell right over.


As a pizza crust?

No flour? No yeast? No rise?

I’m in! I’m so so so so in!

This was really tasty.

That being said, I highly doubt you’re going to fool your super-duper, incredibly picky, anti-veggie-consuming 4 year old with this recipe, but it would please most other kids, foodies, friends, and enemies.

Look, Mom! There is cauliflower in my pizza crust!

I made mini-pizzas instead of one large pizza. This recipe makes about 2-3 individual sized pizzas. Bake for 10-12 minutes instead of 15 minutes.

Cauliflower Pizza Crust

about 2C packed shredded cauliflower (use large holes on box grater to ‘shred’ cauliflower)
1 egg
1/4C mozzarella (up to 1C depending on how cheesy you want crust to be)
1 clove garlic (or 1/2tsp garlic powder)
1/2tsp oregano
sprinkle of salt
Pizza toppings and sauce of choice

Place shredded cauliflower in microwave-safe bowl. Microwave shreds for 8 minutes (uncovered, don’t add water). Allow to cool.
Add egg, mozarella, garlic, oregano, and salt to shredded (cooled) cauliflower. Stir to combine.
Preheat oven to 450. Shape into a 9-10 inch pizza round on lined baking sheet. Bake at 450 for about 15 minutes until golden brown. Remove from oven.
Turn oven to broil.  Top crust with sauce and desired toppings. Brown under broiler for 3-4 minutes – watch it carefully – don’t let it burn!
Eat and enjoy.

Note: the crust is good just sliced and dipped in marinara – no toppings necessary.
