Visitors Came. Visitors Went. I Made Cookies.

Visitors came from Minnesota to visit (yours truly).

Visitors (and yours truly) saw the sites of wonderful, wonderful Chicago.

Visitors (and yours truly) ate lots of amazing food in Chicago.
Went here. And here. And here. And here.

Visitors left. Yours truly is now with a void in her soul, an emptiness in her apartment, and a need for cookies.

Cookies! Cookies! Cookies!

These’ll do the trick I think.

 

Almond Joy Cookie Bars (vegan)

1C white whole wheat flour
1/2C old-fashioned oats
1/2C unsweetened, shredded coconut
1/2C roasted almonds, chopped
1/2C chocolate chips
1/2tsp baking soda
2/3tsp salt
3/4C sugar
1/2C almond butter
1/2C almond, soy, coconut, or dairy milk
1/2tsp almond extract
1/2tsp coconut extract

Preheat oven to 350. Spray 8×8 with no-stick spray.
In a bowl, combine flour, oats, coconut, almond, chocolate chips, baking soda, and salt. Stir to combine.
In a different bowl, add sugar, almond butter, milk, almond extract, and coconut extract. Stir to combine.
Pour wet ingredients into dry ingredients, stirring until just combined.
Place/Spread batter into prepped pan. Bake at 350 for 25 minutes or until edges begin to brown slightly.
Allow to cool. Cut into bars. Enjoy.
