Edamame Black Bean Salad

Did you jump on the treadmill first thing this morning? 
Me too. 
Did you run slower than you thought possible? 
Me too. 
Did you feel a little defeated afterwards? 
Me too. 
Are you going to try again tomorrow? 
…. yeah, I don’t know either…

Black Bean Edamame Salad

1C edamame, thawed if using frozen
1 (15oz) can black beans, rinsed and drained
1/4C red onion, chipped
2 green onions, sliced
1/2C red pepper, chopped
1/2C yellow pepper, chopped
2 cloves garlic, minced
1/4C olive oil
1/4C red wine vinegar
1tsp sugar
1/2tsp dried basil
salt, pepper

Combine edamame, beans, red onion, green onion, peppers in a bowl. In a smaller bowl, whisk together garlic, olive oil, red wine vinegar, sugar, and basil. Add olive oil dressing to vegetables. Toss and refrigerate for a few hours before serving.
