Chickpeas Roasting on an Open Fire…

Remember this famous Christmas song:

Chestnuts roasting on an open fire… Jack Frost blah blah blah blah nose… 

Well, if you simply exchange chestnuts for chickpeas and fire for oven… and throw in a dash of sugar and a pinch of cinnamon you have yourself a WONDERFUL snack.

Cinnamon Roasted Chickpeas

1 15oz can chickpeas (aka garbanzo beans)
1T olive oil
1tsp cinnamon
1T sugar
1T honey (can substitute agave or maple syrup or omit if vegan)

Preheat oven to 375. Drain and rinse chickpeas. In a bowl combine chickpeas, olive oil, cinnamon, and sugar. Toss to coat. Pour chickpeas onto baking sheet lined with parchment paper. Roast at 375 for 35-40 minutes, stirring every 10-15minutes to ensure even cooking. When finished chickpeas should be crunchy and not soft in the middle — you may need to cook a bit longer than 40 minutes to achieve desired texture. Once roasted, toss immediately with 1T of honey. Place back on pan and allow to cool. Store in an airtight container.
