Cheddar Cheese Crackers

Did you try that tomato soup I posted about the other day? Did you think it needed some crackers? You are right!

Whole Wheat Cheddar Cheese Crackers

6 oz grated cheddar (about 1 1/2C)
4T butter
3/4C whole wheat flour
1/4tsp onion powder
1/8tsp salt (optional)

Preheat oven to 350. Combine all ingredients in a food processor until it forms a ball. I had to add about 1-2T of cold water to get my ingredients to come together. Refrigerate mixture for about 30 minutes.

Roll the dough out onto a floured surface. If possible, roll it to about 1/8 of an inch. The thinner the dough, the crispier the cracker. Cut into shapes of your choice. I used a sharp knife to create a grid of misshapen triangles and squares. Perhaps you can learn from my mistake and make more beautiful crackers.

Spread dough crackers out on parchment-lined baking sheet. They don’t really expand so you can place them fairly close to one another.  Bake at 350 for about 8-10 minutes. They are done when they start to brown on the edges. My crackers were about the same size as your average cheez-its and they took about 10 minutes.
