I am really bad at eating breakfast. I occasionally shove a banana in my mouth and take a swig of coffee as I am running out the door. Rarely do I sit down for anything that should be referred to as an actual meal. This has changed in recent weeks thanks to my new best friend called crock-pot oatmeal.
Dear Crock-Pot Oatmeal,
You have changed my life, specifically the AM part of it. Gone are the days when I feel painfully hungry by 8AM. I almost make it to lunch now. Key word: almost.
Cherry Almond Crock-Pot Steel Cut Oatmeal

2C vanilla almond milk – unsweetened
1C steel cut oats
1T ground flaxseed (optional)
1/2tsp almond extract
2T brown sugar
1 apple, peeled and grated
3/4C dried cherries (unsweetened)
1.5T vegan butter substitute or butter
dash of salt
Another complicated recipe… take the above list and dump it into your 3qt crock pot (that has been lightly sprayed with no-stick spray). Give it a quick stir, throw on the lid, set to low, and forget about it for 7hrs. Garnish with a few sliced/toasted almonds if your heart desires.
