Chewy Pumpkin Granola Bars

Chewy Pumpkin Granola Bars

2C old fashioned oats
2tsp cinnamon
1tsp pumpkin pie spice
1/4tsp salt
2/3C pumpkin puree
1/3C agave nectar
3T maple syrup
1tsp vanilla
1C extras (ie almonds roughly chopped, chocolate chips, dried cranberries, raisins, etc)

In a food processor, process 1/2C oats into a fine dust/flour. In a bowl, combine oat flour, remaining whole oats, cinnamon, pumpkin pie spice, and salt. Mix. In a separate bowl, combine pumpkin, agave, maple syrup, and vanilla. Stir to combine. Combine dry and wet ingredients. Add in extras of your choice – I used almonds, chocolate chips, and cranberries — and I suggest you do the same. I used 1/3C of each. Line a 9×9 inch pan with parchment paper. Spray lightly with no-stick spray. Spread oat mixture into pan. Use hand to press down firmly- making sure it is as even as possible. Bake at 300 for 25 minutes. Allow to cool. Slice into bars (makes approx 12).
