Oatmeal Chocolate Chip Cookies

Confession: I am a real-life cookie monster.

I’m less blue, less furry, and I have a much less distinctive voice; however, I devour cookies with the exact same passion as the beloved monster himself. Yes, I am a real-life cookie monster. Real-life cookie monsters need real-life, real-good cookie recipes. Try this one. Om-nom-nom-nom!

Chewy Oatmeal Chocolate Chip Cookies

1 stick + 6T butter
3/4C brown sugar
1/4C white sugar
1tsp vanilla
2 eggs
1tsp baking soda
1/2tsp salt
1 1/2C AP flour
3C rolled oats (aka old-fashioned oats)
1 1/4C chocolate chips

Preheat oven to 350.  Spray baking sheet with no-strick spray and set aside.
In a bowl, beat butter and sugar until light and fluffy. Add in eggs and vanilla and beat until combined. In a separate bowl combine dry ingredients (baking soda, flour, salt, oats).
 Combine wet and dry ingredients. Stir in chocolate chips. Drop by tablespoons onto prepared baking sheet leaving about 2inches in between. Bake at 350 for 9-11minutes. Transfer to wire rack to cool.
