Oatmeal for my Mono-Infested Brother

My youngest brother has a rip-roaring case of mono. Insert sad face. I decided to dedicate this recipe to him because:

1. He loves bananas
2. He loves oatmeal

Baked Oatmeal

1C old-fashioned oatmeal (aka rolled oats)
1/4C walnuts
1/2tsp baking powder
3/4tsp cinnamon
pinch of salt
1/4C maple syrup
1C milk
1 large egg, lightly beaten
2T melted butter
1tsp vanilla extract
2 ripe bananas, peeled and sliced
1C blueberries

Preheat oven to 375. In a bowl, combine baking powder, oatmeal, walnuts, salt, and cinnamon. Set aside. In another bowl, combine milk, maple syrup, beaten egg, vanilla and butter (cooled). Set aside. Lightly spray a 2qt baking dish with no-stick spray. Spread the sliced bananas on the bottom of the baking dish. Top with 1/2C of blueberries. Sprinkle the oat-mixture over the top of the bananas/berries. Pour the liquid mixture evenly over the oats. Top with remaining blueberries and walnuts. Bake at 375 for 35-45 minutes.

Then eat!
