PB-Cocoa No-Bake Cookies

Need a cookie… like now? or now? How about now? Yes, I have those days too. Sometimes, I run to the store. Sometimes I shove a bunch of chocolate chips in my mouth hoping that will satisfy the craving. Sometime I make a batch of dough. Sometimes, I make these. They are easy to throw together and delicious. Who doesn’t love a good chocolate and pb concoction? These are perfect for those super-hot summer nights when the idea of turning the oven on makes you want to buy a walk-in freezer just so you can sit in it.

No Bake Chocolate Cookies

1 stick butter
2C sugar
4T cocoa powder
1/2C milk
1/2C peanut butter
2tsp vanilla extract
3C quick-cooking oats

In a saucepan, combine butter, sugar, cocoa powder, and milk over medium-high heat. Bring to a boil and boil for 1 minute. Turn heat off. Stir in peanut butter and vanilla extract. Add the oats and stir to combine. Drop spoonfuls onto waxed paper. Allow to cool. Eat!
