Brownie Cupcakes

Big News! Brother #2 turned 18! Despite being the middle child, we still consider him pretty important so we decided to celebrate. Aside from a “Mary Cristmas 5 months ago” poster and a whole slew of rediculous gag gifts, we obviously had to make him some good eats too. My brother has not-so-summer tastes in food, even though his birthday falls in July. He always requests soups and stews … for his birthday in July. He also has an unsurpassed love of pumpkin pie. I threw tradition out the window and went for chocolate-chocolate with chocolate. Who doesn’t love chocolate?

These don’t disappoint. Super decadent and dense — like a brownie in cupcake form. Pure genius-ness.

Note: Brother turned 18 not 81. It seemed like a funny decision at the time. I guess you had to be there.

Brownie Cupcakes

4oz unsweetened chocolate
1/2C butter (unsalted)
1 1/4C granulated sugar
1tsp vanilla extract
3 large eggs
3/4C AP flour
1/2tsp salt

Preheat oven to 325. Line muffin tin with paper liners.

Melt chocolate and butter in microwave. Don’t let it burn. That would be bad — in taste and smell. Let it cool for a few minutes. Add in sugar, vanilla, and eggs. At this point, if you have created scrambled eggs in chocolate sauce you didn’t heed my advice about letting the chocolate mixture cool. The bad news is that this creation will not make for good cupcakes. The good news is that you might have just created a great kid-approved chocolate egg breakfast dish. Key word = might. Anyways, take your sugar/vanilla/egg/chocolate/butter mixture and whisk until everything is pretty darn well incorporated. Mix in salt and flour. Stir to combine.

Fill 12 muffin cups with equal portions of the mixture (~2/3 full). Bake for 25-35minutes. Note: The original recipe says 20-25 minutes but mine cooked for nearly 35-40 minutes. Either my oven is messed up, I way overcooked these brownie-cupcakes, or the original recipe is an idealists take on time. In fewer words, check your brownies often.

Chocolate Frosting

4oz unsweetened chocolate
2/3C butter
1 1/3C powdered sugar, sifted
1tsp vanilla extract

Melt chocolate. Allow to cool. Beat chocolate and butter. Add powdered sugar and vanilla. Beat until smooth and fluffy and perfect, about 2-3minutes.
