At the grocery store today, there was a row of beautiful spring-green asparagus calling out my name. No joke. They were literally screaming at me, “buy me! buy me!” Like this:
So I did!
When I got home, I immediately started googling various terms like “asparagus” and “delicious asparagus” and “easy and delicious asparagus for dinner” and “amazingly good and super easy and so darn delicious asparagus food stuff.” After a lot of intense searching, I came across a recipe for shaved asparagus pizza. Shaved asparagus? I shave my legs, but not usually my asparagus… until now. Ladies and Gentleman, allow me to introduce you to shaved asparagus pizza.
Shaved Asparagus Pizza

Your Favorite Pizza Dough (this one, store bought, or the one below)
1/4- 1/2lb asparagus, shaved (use a vegetable peeler!)
1/4C parmesan cheese
2C mozzarella cheese
1T-2T olive oil
1-2 cloves garlic, minced
sprinkle of chili pepper flakes (optional)
1-2 green onions, sliced thinly (optional, yet necessary garnish)
Preheat oven to 500 degrees (or the hottest temperature you can achieve). Form a pizza-like shape with your dough. If your a tosser, toss. If your a roller, roll. If your a finger-smusher/palm-smoosher (like me), palm-smoosh/smash away. Hopefully, you achieve a pizza like form ~ preferably 10-12inch round. Sprinkle mozzarella and parmesan cheese over crust. In a separate bowl, add olive oil, a sprinkle of salt, a dash of fresh cracked pepper, red pepper flake, minced garlic and shaved asparagus. Stir to combine. Place a layer of asparagus on top of pizza. Bake for about 10-15minutes until the cheese is melted. Throw some green onions on top and slice that sucker. Eat. It. Up.
A note about shaving asparagus: Wash your asparagus but don’t trim off the stem end. Use the tough end to hold while you “shave” asparagus using veggie peeler. My asparagus varied in thickness, but it didn’t really affect the overall pizza or final product. It took a few stalks to get the hang of it, but once I did, it was real easy.
Just for fun, I tried a different Pizza Dough Recipe. It’s a bit thinner than my usual recipe. It was easy to make and good. I would recommend it and will definitely use it again in the future.
Whole Wheat Pizza Crust

3/4C AP flour + 3/4C whole wheat flour
3/4tsp active dry yeast
1/2C warm water (110-115 degrees)
1T olive oil
Place yeast in water. Allow to sit for 2-5minutes until starts to foam. Add flour and olive oil. Knead into a ball — lets say knead for about 3 minutes. Dump into a lightly-oiled bowl. Cover with plastic wrap. Let it sit on the counter for about an hour, until it has doubled in size. Dump it out onto counter (dusted in flour) and knead for a few minutes. Cover in plastic wrap and let rest for about 20minutes. Preheat oven to hottest setting (~500 degrees). Shape dough into pizza-form. Add toppings. Bake for about 10-12minutes.
