Not Your Mom’s Bran Muffins

I’ve said it before and I will say it again, “I LOVE LOVE LOVE LOVE LOVE LOVE MUFFINS!”

There is really not much else to say. Try this recipe. Now.

Classic Bran Muffins

1.5C bran
1C buttermilk (or 1C milk + 1tsp lemon juice — mix and let sit on counter for 2-3min before using — it will start to curdle a bit)
1 egg
2/3C brown sugar (or 1/3C brown sugar + 1/3C honey)
1/3C vegetable oil
1/2tsp vanilla extract
1C AP flour (or whole wheat flour)
1tsp baking powder
1tsp baking soda
1/2tsp salt
1/2C raisins

Combine bran and buttermilk (or milk-lemon juice). Let sit in bowl for about 10 minutes. While bran mixture is sitting, combine egg, sugar, oil and vanilla in a bowl. Add to the bran mixture and mix thoroughly. Add baking powder, baking soda, salt, flour, and raisins stirring until combined. Don’t over-stir, unless your aiming for tough muffins. If rock-hard, tunneled muffins are your thing, stir until your arm hurts.
Fill each muffin cup about 2/3 full and bake at 375 for about 15-20minutes, until they pass the toothpick test.

I used all the substitutions in parenthesis for my muffins and they came out perfectly. Next time, I plan to substitute the oil with applesauce. I’ll let you know if that works well.
