Mary’s White Chocolate Scones

Had this recipe at work yesterday and they were unbelievably delicious. We had them with craisins! So good that you should try them…

Mary’s White Chocolate Scones

2C flour
1/4c sugar
2 1/2 tsp baking powder
6 T butter
1/2 tsp salt
1/2 c raisins (or craisins, dried cherries, dried apricots, currants)
1/2 c white chocolate chips
1 egg slightly beaten combined with buttermilk to equal 1cup total

Combine flour, baking powder, sugar and salt. Cut in butter with pastry blender until mixture looks like course crumbs. Stir in raisins and white chocolate chips. Stir in egg/buttermilk combination until mixture hold together. (less stirring is better). Add more buttermilk if necessary. Drop by spoonful on ungreased cookie sheet. Bake at 400 for 10-12 minutes.

Yield: 12 generous scones
