Tuscan Soup

This is an Olive Garden copy cat recipe and it’s pretty much on-the-money.

Zuppa Toscana (Olive Garden Copy Cat Recipe)

1 lb hot italian sausage
1.5 tsp crushed red pepper
1 large onion- diced
4 Tbsp bacon — (about 4 slices bacon, cooked, and chopped)
3 cloves garlic chopped
10 cups water ( we usually do 1/2 chicken broth, 1/2 water)
1 c heavy cream
4-5 large russet baking potatoes- sliced/diced/chopped- rough is good
1/2 bunch of kale

Saute sausage with crushed red pepper. Drain off excess fat. Add onion and saute until translucent. Add bacon and garlic and cook for a minute. Add water/chicken broth. Add in potatoes. Turn heat to high, bring to boil, and cook until potatoes are soft (30-45 minutes). Add 1 c heavy cream and cook for 10 minutes. Add kale (after chopping roughly) and cook for several minutes. Serve with crusty bread (we love sourdough).
