2c shredded broccoli (we used 1 entire bag)
1c shredded carrots
1 jalapeno pepper, seeded and minced
1/2 medium red onion sliced thin
1/4c cider vinegar
zest of 1 lime
1 lime juiced
1/2 tsp salt
1/2 tsp red pepper flakes
1/2 tsp black pepper
2 T olive oil
Combine carrots, broccoli, onion, and jalapeno in bowl.
Add vinegar, lime zest and juice, salt, sugar, red pepper flakes, and black pepper in small saucepan. Bring to a light boil over low heat. Remove from heat and cool. Add olive oil. Pour over broccoli/carrot/onion/jalapeno mixture. Mix it up!
Refrigerate for a few hours– then serve!
